- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup rolled oats for streusel
- 1/4 cup butter for streusel
- 1/4 cup brown sugar for streusel
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix all the dry ingredients.
- In another bowl, combine the wet ingredients.
- Mix the wet and dry ingredients until just combined.
- Fill muffin tins with batter and set aside.
- For streusel, mix oats, butter, and brown sugar until crumbly, then sprinkle over batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
