  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined. Gently fold in the blueberries.
  6. In a separate bowl, mix together the brown sugar, rolled oats, and ground cinnamon for the streusel topping.
  7. Fill each muffin cup with the batter and sprinkle the streusel on top.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra flavor, add a pinch of lemon zest to the batter.
  • If using frozen blueberries, do not thaw before adding to the batter.
