Chicken Burrito Casserole

A delicious chicken burrito casserole that combines all your favorite burrito ingredients in a hearty, family-friendly dish.

  • 2 cups cooked chicken, shredded
  • 1 cup rice, cooked
  • 1 can black beans, drained
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups shredded cheese
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked chicken, rice, black beans, corn, salsa, cumin, chili powder, and half of the cheese.
  3. Spoon the mixture into a greased casserole dish and spread evenly.
  4. Top with remaining cheese and gently dollop sour cream over the top.
  5. Bake in the preheated oven for 25-30 minutes or until heated through and cheese is bubbly.
  6. Let it cool for a few minutes before serving.

Notes
