Cinnamon Roll Banana Bread

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Add the sugar, egg, and vanilla extract, mixing well.
  6. Stir in the flour until just combined.
  7. If using, fold in the chopped pecans gently.
  8. In a greased loaf pan, pour half the batter, sprinkle with cinnamon, then add the remaining batter on top.
  9. Bake for 60-65 minutes or until a toothpick comes out clean.
  10. Let cool before slicing and serving.

Notes

  • For an extra cinnamon swirl, you can mix a bit of cinnamon and sugar to sprinkle between the layers of batter.
