- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 cups all-purpose flour
- 1/2 cup milk
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, cream together the butter and sugars until light and fluffy.
- Add the eggs and vanilla, mixing well.
- In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually mix the dry ingredients into the wet mixture, alternating with milk.
- Fold in the chopped rhubarb.
- Pour the batter into the loaf pan and bake for 60-70 minutes.
- Allow to cool before slicing and serving.
