Cinnamon Swirl Rhubarb Bread

A delightful and sweet treat combining the tartness of rhubarb with a rich cinnamon swirl.

  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, cream together the butter and sugars until light and fluffy.
  3. Add the eggs and vanilla, mixing well.
  4. In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually mix the dry ingredients into the wet mixture, alternating with milk.
  6. Fold in the chopped rhubarb.
  7. Pour the batter into the loaf pan and bake for 60-70 minutes.
  8. Allow to cool before slicing and serving.

Notes

  • For a sweeter bread, you can add extra sugar.
  • Try adding nuts for added texture.
