  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup streusel topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, melted butter, eggs, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill each muffin cup halfway with the batter, sprinkle a layer of streusel topping, then fill with remaining batter and top with more streusel.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack.
