- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened cocoa powder
- 1 cup sugar
- 2 cups cream cheese
- 1 cup heavy cream
- 3 large eggs
- 1 tablespoon vanilla extract
- 1 cup brewed coffee, cooled
- ½ teaspoon salt
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, cocoa powder, and sugar. Press this mixture into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add the heavy cream, eggs, vanilla extract, brewed coffee, and salt. Mix until fully combined and smooth.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set and only slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove from the oven and let cool before refrigerating for at least 4 hours or overnight.
