Creamy Reuben Soup: A Delicious Twist on a Classic

Ingredients

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups sauerkraut, drained
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon caraway seeds
  • Salt to taste
  • Pepper to taste
  • 2 cups Swiss cheese, shredded

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the chicken ham and cook for another 2 minutes.
  4. Pour in the chicken broth and bring to a simmer.
  5. Stir in the sauerkraut, heavy cream, Dijon mustard, and caraway seeds.
  6. Cook for 10 minutes, stirring occasionally.
  7. Add salt and pepper to taste.
  8. Remove from heat and stir in the Swiss cheese until melted.
  9. Top with crumbled turkey bacon before serving.

Notes

  • For a vegetarian version, omit the bacon and ham.
  • Adjust the sweetness of the soup with more or less sauerkraut based on preference.
