Creamy Tomato White Bean Stew

  • 4 strips turkey bacon
  • 1 can diced tomatoes
  • 1 can white beans
  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon until crispy.
  2. Add the onions and garlic, and sauté until translucent.
  3. Stir in the diced tomatoes, white beans, vegetable broth, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in the heavy cream and let it heat through before serving.

  • For a vegetarian option, omit the turkey bacon.
