Creamy Tomato White Bean Stew

A cozy and satisfying stew that combines creamy tomatoes with protein-packed white beans and savory turkey bacon.

  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) white beans, drained and rinsed
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, add onion and garlic, cooking until translucent.
  3. Add the diced tomatoes, white beans, broth, basil, and oregano. Simmer for 15 minutes.
  4. Stir in the heavy cream and chopped bacon, then season with salt and pepper.
  5. Serve hot.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Serve with crusty bread for dipping.
