  • 4 cups pineapple chunks
  • 2 pounds chicken thighs
  • 1 cup brown sugar
  • 1/2 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. In a large bowl, combine pineapple chunks, brown sugar, soy sauce, garlic, and ginger.
  2. Add chicken thighs to the crockpot and pour the pineapple mixture over them.
  3. Cook on low for 4-6 hours or until chicken is tender.
  4. In a small bowl, mix cornstarch and water to create a slurry, then stir it into the crockpot to thicken the sauce.
  5. Serve hot over rice, garnished with sliced green onions, if desired.
