Easy Blueberry Muffins

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 2 cups fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the dry ingredients: flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, eggs, and milk.
  4. Combine wet and dry ingredients until just mixed, then gently fold in blueberries.
  5. Fill muffin cups about 2/3 full and bake for 20-25 minutes, or until golden brown.
  6. Allow to cool before serving.

Notes

  • For a lighter muffin, you can substitute half of the all-purpose flour with whole wheat flour.
  • Try adding lemon zest for extra flavor.
