Easy Longevity Soup (Inspired by the Blue Zones)

A nutritious and easy-to-make soup inspired by the longevity-promoting diets from the Blue Zones.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 cup diced tomatoes
  • 4 cups vegetable broth
  • 1 cup lentils, rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups spinach, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic; sauté until translucent.
  3. Stir in the carrots and celery; cook for 5 minutes.
  4. Add the tomatoes, vegetable broth, lentils, thyme, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  6. In the last few minutes, stir in the spinach.
  7. Serve hot and enjoy!

Notes

  • This soup is great for meal prep and can be stored in the fridge for up to a week.
  • Feel free to add other vegetables based on your preference.
