Easy Slow Cooker Chicken Pot Pie

A delicious and easy recipe for a slow cooker chicken pot pie that features turkey bacon for a delightful flavor.

  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup frozen mixed vegetables
  • 1 can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon dried thyme
  • 1 cup chicken broth
  • 1 package refrigerated pie crusts
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, combine chicken, turkey bacon, mixed vegetables, soup, garlic powder, onion powder, thyme, and chicken broth.
  2. Season with salt and pepper.
  3. Cover and cook on low for 6-8 hours or until the chicken is cooked through.
  4. About 30 minutes before serving, roll out pie crust and place it over the filling.
  5. Cook on high for an additional 30 minutes until the crust is golden brown.
