  • 1 pound boneless chicken breast, sliced
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 teaspoon lime juice
  • 1 cup mushrooms, sliced
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • 1 handful cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Heat vegetable oil in a pot over medium heat.
  2. Add chicken slices and cook until browned.
  3. Pour in chicken broth and coconut milk, then bring to a boil.
  4. Stir in red curry paste and fish sauce; reduce heat and simmer.
  5. Add mushrooms and bell pepper; cook until tender.
  6. Stir in lime juice and green onions just before serving.
