Easy Vegetable Curry (One-pot, 30 minutes)

An easy and quick recipe for a delicious vegetable curry that can be made in just 30 minutes, all in one pot.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • 2 cups mixed vegetables (such as bell peppers, carrots, and peas)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup coconut milk
  • 2 cups cooked rice, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until onions are translucent.
  3. Stir in curry powder and cook for an additional minute.
  4. Pour in diced tomatoes and vegetable broth, bring to a boil.
  5. Add mixed vegetables and chickpeas to the pot, reduce heat and simmer for 15 minutes.
  6. Season with salt and pepper, then stir in coconut milk.
  7. Serve over cooked rice.

Notes

  • This curry can be made ahead of time and reheated.
  • Feel free to substitute with your favorite vegetables.
