  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices turkey bacon, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup green beans, trimmed
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, brown the beef cubes in the bacon fat.
  3. Add onions and garlic, cooking until softened.
  4. Stir in the tomato paste, then add the beef broth and red wine.
  5. Add carrots, potatoes, green beans, herbs, and bay leaves.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours or until the meat is tender.
  7. Season with salt and pepper before serving.
