  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 pound carrots, sliced
  • 1/4 cup brown sugar
  • 2 tablespoons butter (for carrots)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, thyme, rosemary, salt, and pepper. Coat chicken breasts with the mixture.
  3. Place chicken in a baking dish and bake for 25-30 minutes or until cooked through.
  4. Meanwhile, boil potatoes in a pot of salted water until tender. Drain and mash with milk and butter.
  5. In another pan, melt butter for glazed carrots. Add carrots and brown sugar, cooking until carrots are tender and caramelized.
  6. Serve chicken with mashed potatoes and glazed carrots.
