Ingredients

  • 2 cups cooked quinoa
  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted and sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the chicken thighs with olive oil, garlic powder, and oregano.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  4. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  5. In bowls, layer the cooked quinoa, grilled chicken, cherry tomatoes, cucumber, feta, and olives.
  6. Drizzle with additional olive oil if desired and serve.

Notes

  • For a vegetarian version, substitute chicken with grilled eggplant or zucchini.
