  • 2 cups cooked orzo
  • 1 can (14 oz) diced tomatoes
  • 1 cup feta cheese, crumbled
  • 1/2 cup olives, sliced
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add chicken thighs and cook until no longer pink.
  4. Stir in the diced tomatoes, cooked orzo, feta, olives, oregano, salt, and pepper.
  5. Transfer the mixture to a baking dish and bake in the preheated oven for 25-30 minutes.
  6. Remove from the oven and let it cool for a few minutes before serving.
