Greek Stuffed Onions

  • 4 large onions
  • 1 cup rice
  • 2 cups vegetable broth
  • 1 teaspoon olive oil
  • 1 bell pepper, diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the onions and hollow them out.
  3. In a skillet, heat olive oil and sauté the bell pepper until soft.
  4. Stir in rice, vegetable broth, oregano, salt, and pepper. Cook until rice is tender.
  5. Remove from heat and mix in feta and parsley.
  6. Stuff the onions with the rice mixture and place them in a baking dish.
  7. Add a little water to the bottom of the dish and cover with foil.
  8. Bake for 45 minutes, then remove foil and bake for another 15 minutes.

Notes

  • Adjust the spices according to your taste.
  • You can add ground meat for a heartier version.
