- 4 large onions
- 1 cup rice
- 2 cups vegetable broth
- 1 teaspoon olive oil
- 1 bell pepper, diced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Preheat your oven to 375°F (190°C).
- Cut the tops off the onions and hollow them out.
- In a skillet, heat olive oil and sauté the bell pepper until soft.
- Stir in rice, vegetable broth, oregano, salt, and pepper. Cook until rice is tender.
- Remove from heat and mix in feta and parsley.
- Stuff the onions with the rice mixture and place them in a baking dish.
- Add a little water to the bottom of the dish and cover with foil.
- Bake for 45 minutes, then remove foil and bake for another 15 minutes.

- Adjust the spices according to your taste.
- You can add ground meat for a heartier version.
