These healthy banana oatmeal muffins are a guilt-free treat that are perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1/4 cup honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the bananas until smooth.
  3. Add the rolled oats, almond milk, honey, baking powder, baking soda, cinnamon, and salt. Mix until well combined.
  4. If using, fold in the chopped nuts.
  5. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  7. Let cool before removing from the tin.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • These muffins can be frozen for up to 3 months.
