- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup almond milk
- 1/4 cup honey
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped nuts (optional)
- Preheat the oven to 350°F (175°C).
- In a large bowl, mash the bananas until smooth.
- Add the rolled oats, almond milk, honey, baking powder, baking soda, cinnamon, and salt. Mix until well combined.
- If using, fold in the chopped nuts.
- Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Let cool before removing from the tin.
