  • 1 1/2 cups whole wheat flour
  • 1/2 cup honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup blueberries
  • 1 large egg
  • 1/4 cup almond milk
  • 1/4 cup unsweetened applesauce

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, combine the dry ingredients: flour, honey, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the wet ingredients: egg, almond milk, and applesauce.
  4. Mix the wet ingredients into the dry ingredients until just combined. Fold in the blueberries gently.
  5. Pour the batter into the prepared muffin tin and bake for 20-25 minutes until golden.
  6. Let cool before serving.

Notes

  • For a vegan option, substitute the egg with a flax egg.
  • These muffins freeze well, so make a batch to enjoy later.
