Hearty Cheddar Garlic Herb Potato Soup Recipe

A comforting and hearty potato soup enriched with cheddar cheese, garlic, and fresh herbs.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 large potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Stir in the heavy cream, cheddar cheese, thyme, rosemary, salt, and pepper. Cook until the cheese has melted and the soup is heated through.
  4. Blend the soup with an immersion blender for a creamier texture, if desired. Serve hot.

Notes

  • This soup can be made ahead of time, just reheat gently before serving.
  • Add more cheese on top for extra indulgence.
