Hearty Cheddar Garlic Herb Potato Soup Recipe

  • 4 large potatoes, diced
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add diced potatoes and chicken broth. Bring to a boil and simmer until potatoes are tender.
  3. Stir in heavy cream, cheddar cheese, thyme, and parsley. Cook until cheese is melted.
