High Protein Crispy Garlic Chicken Fried Rice

Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • 1 cup frozen peas and carrots
  • 2 eggs, beaten

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Add diced chicken and cook until browned.
  4. Stir in the cooked rice and soy sauce.
  5. Push the rice to one side and add beaten eggs, stirring until cooked.
  6. Mix in green onions and peas and carrots, cooking until heated through.
