  • 1/2 cup protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 ripe bananas, mashed
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond milk
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the rolled oats, protein powder, baking powder, and salt.
  3. In another bowl, mix together the mashed bananas, honey (or maple syrup), and almond milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool for a few minutes in the tin before transferring to a wire rack to cool completely.
