- 2 cups rice
- 1 pound chicken thighs
- 1 cup BBQ sauce
- 2 cups chicken broth
- 1 cup corn
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Heat olive oil in a large pan over medium heat.
- Add chopped onion and garlic, sauté until fragrant.
- Stir in the rice and cook for an additional 2 minutes.
- Add chicken thighs, BBQ sauce, chicken broth, and seasonings.
- Bring to a boil, then reduce heat, cover, and simmer for 25 minutes.
- In the last 5 minutes, stir in the corn.
- Remove from heat and let sit covered for 5 minutes before serving.
Notes
