  • 2 cups rice
  • 1 pound chicken thighs
  • 1 cup BBQ sauce
  • 2 cups chicken broth
  • 1 cup corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and garlic, sauté until fragrant.
  3. Stir in the rice and cook for an additional 2 minutes.
  4. Add chicken thighs, BBQ sauce, chicken broth, and seasonings.
  5. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes.
  6. In the last 5 minutes, stir in the corn.
  7. Remove from heat and let sit covered for 5 minutes before serving.

Notes

  • For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
  • You can substitute chicken breasts if preferred.
