  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom of each muffin cup.
  4. In a large bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs, lemon juice, and lemon zest, and beat until fully combined.
  6. Pour the filling over the crust in each muffin cup.
  7. Bake for 18-20 minutes, or until the centers are set.
  8. Let cool, then chill in the refrigerator for at least 2 hours before serving.
