Pumpkin S’mores Cookies

A delicious blend of pumpkin and s’mores flavors make these cookies the perfect fall treat.

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips
  • 1/2 cup crushed graham crackers

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the pumpkin puree, brown sugar, and granulated sugar with the softened butter until smooth.
  3. Beat in the eggs, one at a time, until fully incorporated.
  4. In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the mini marshmallows, chocolate chips, and crushed graham crackers.
  7. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • These cookies can be stored in an airtight container for up to a week.
  • For extra s’mores flavor, try adding more crushed graham crackers.
