  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, whisk together the sugars, oil, eggs, pumpkin puree, and vanilla.
  4. Gradually add the wet ingredients to the dry ingredients and mix until combined.
  5. In a small bowl, mix the cream cheese, powdered sugar, and milk until smooth.
  6. Fill each muffin cup with batter, add a dollop of cream cheese mixture, and swirl with a toothpick.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For an extra touch, top the muffins with a cinnamon sugar sprinkle before baking.
