- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 tablespoon milk
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, baking soda, baking powder, spices, and salt.
- In another bowl, whisk together the sugars, oil, eggs, pumpkin puree, and vanilla.
- Gradually add the wet ingredients to the dry ingredients and mix until combined.
- In a small bowl, mix the cream cheese, powdered sugar, and milk until smooth.
- Fill each muffin cup with batter, add a dollop of cream cheese mixture, and swirl with a toothpick.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
