  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 cup spinach
  • 2 green onions, chopped

Instructions

  1. In a pot, heat the chicken broth over medium heat.
  2. Add in the sliced chicken and cook until no longer pink.
  3. Stir in the coconut milk and red curry paste, mixing well.
  4. Add the mushrooms and bell pepper, cooking for 5-7 minutes.
  5. Stir in the spinach, fish sauce, and lime juice just before serving.
