Quinoa and Veggie Stir-Fry Recipe

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a pot, bring vegetable broth to a boil and add quinoa. Reduce heat, cover, and simmer for about 15 minutes.
  3. In a large skillet, heat olive oil over medium heat. Add bell pepper, zucchini, carrot, and broccoli, and sauté for about 5 minutes.
  4. Add minced garlic and cook for another minute.
  5. Stir in the cooked quinoa, soy sauce, and sesame oil. Mix well and cook for 2-3 minutes.
  6. Serve warm.
