  • 1 can kidney beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, fresh or frozen
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • salt to taste

Instructions

  1. In a large bowl, combine all the ingredients for the salad.
  2. In a separate small bowl, whisk together olive oil, lime juice, cumin, and salt.
  3. Pour the dressing over the salad and toss to combine.
  4. Let the salad sit for at least 30 minutes to allow flavors to meld.
  5. Serve chilled or at room temperature.
