Roasted Beets and Carrots Salad with Burrata

A vibrant and nutritious salad featuring roasted beets and carrots topped with creamy burrata.

Ingredients

  • 2 medium beets, peeled and diced
  • 3 medium carrots, peeled and sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ounces burrata cheese
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the beets and carrots with olive oil, salt, and black pepper.
  3. Spread the vegetables on a baking sheet and roast for 25-30 minutes until tender.
  4. Remove from the oven and let cool slightly.
  5. Arrange the roasted beets and carrots on a serving platter.
  6. Tear the burrata cheese and place it on top of the salad.
  7. Drizzle with balsamic glaze and sprinkle with fresh basil before serving.
