Short Rib Ragu with Parmesan Mashed Potatoes

Ingredients

  • 2 pounds short ribs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 large potatoes, peeled and quartered
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Brown the short ribs on all sides.
  3. Add onions, carrots, and garlic; sauté until softened.
  4. Pour in beef broth, red wine, and stir in tomato paste, thyme, and bay leaf.
  5. Cover and braise in the oven for about 2.5 hours, until the meat is tender.
  6. Meanwhile, boil potatoes in salted water until tender. Drain and mash with cream, Parmesan, salt, and pepper.
  7. Remove short ribs, shred the meat, and return to the sauce.
  8. Serve the ragu over Parmesan mashed potatoes.

Notes

  • For added flavor, let the ragu sit for a few hours or overnight before serving.
