- 2 pounds short ribs
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 large potatoes, peeled and quartered
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- salt and pepper to taste
- Preheat your oven to 350°F (175°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Brown the short ribs on all sides.
- Add onions, carrots, and garlic; sauté until softened.
- Pour in beef broth, red wine, and stir in tomato paste, thyme, and bay leaf.
- Cover and braise in the oven for about 2.5 hours, until the meat is tender.
- Meanwhile, boil potatoes in salted water until tender. Drain and mash with cream, Parmesan, salt, and pepper.
- Remove short ribs, shred the meat, and return to the sauce.
- Serve the ragu over Parmesan mashed potatoes.
