Slow Cooker Beef Bourguignon

A comforting French stew made in the slow cooker, featuring tender beef, rich red wine, and savory vegetables.

  • 2 pounds chuck beef, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 4 slices bacon, diced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 cloves garlic, minced
  • 2 cups red wine (preferably Burgundy)
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 pound small mushrooms, halved
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. In a skillet, cook bacon until crispy. Remove and set aside.
  2. Brown the beef in the bacon fat, then transfer to a slow cooker.
  3. Add onion, carrots, and garlic to the skillet and sauté for a few minutes.
  4. Transfer the vegetables to the slow cooker.
  5. Stir in wine, beef broth, tomato paste, thyme, and bay leaves.
  6. Add the cooked bacon and mushrooms.
  7. Cover and cook on low for 6-8 hours or until beef is tender.
  8. Remove bay leaves before serving and garnish with parsley.

Notes

  • For a thicker sauce, you can add a slurry made of cornstarch and water.
  • Pair with crusty bread or mashed potatoes for a complete meal.
