- 2 pounds chuck beef, cut into 1-inch cubes
- 1 tablespoon olive oil
- 4 slices bacon, diced
- 1 onion, chopped
- 3 carrots, sliced
- 2 cloves garlic, minced
- 2 cups red wine (preferably Burgundy)
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 pound small mushrooms, halved
- 2 tablespoons chopped fresh parsley (for garnish)
- In a skillet, cook bacon until crispy. Remove and set aside.
- Brown the beef in the bacon fat, then transfer to a slow cooker.
- Add onion, carrots, and garlic to the skillet and sauté for a few minutes.
- Transfer the vegetables to the slow cooker.
- Stir in wine, beef broth, tomato paste, thyme, and bay leaves.
- Add the cooked bacon and mushrooms.
- Cover and cook on low for 6-8 hours or until beef is tender.
- Remove bay leaves before serving and garnish with parsley.
Notes
- For a thicker sauce, you can add a slurry made of cornstarch and water.
- Pair with crusty bread or mashed potatoes for a complete meal.
