- 2 pounds beef chuck, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (preferably Burgundy)
- 2 tablespoons tomato paste
- 1 teaspoon fresh thyme
- 2 bay leaves
- 1 pound carrots, sliced
- 8 ounces mushrooms, sliced
- 1/4 cup fresh parsley, chopped
- Season the beef chuck with salt and pepper.
- In a skillet, heat olive oil over medium-high heat. Sear the beef chunks on all sides until browned, then transfer to a slow cooker.
- In the same skillet, sauté the onion and garlic until translucent, then add to the slow cooker.
- Pour in the beef broth, red wine, and add the tomato paste, thyme, and bay leaves. Stir gently.
- Add in the carrots and mushrooms to the slow cooker. Cover and cook on low for 7-8 hours or high for 4-5 hours.
- Once done, remove bay leaves and stir in fresh parsley before serving.
Notes
- For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the stew during the last hour of cooking.
- Serve with crusty bread or over mashed potatoes for an extra comforting meal.
