Slow Cooker Beef Bourguignon

  • 2 pounds beef chuck, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (preferably Burgundy)
  • 2 tablespoons tomato paste
  • 1 teaspoon fresh thyme
  • 2 bay leaves
  • 1 pound carrots, sliced
  • 8 ounces mushrooms, sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Season the beef chuck with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat. Sear the beef chunks on all sides until browned, then transfer to a slow cooker.
  3. In the same skillet, sauté the onion and garlic until translucent, then add to the slow cooker.
  4. Pour in the beef broth, red wine, and add the tomato paste, thyme, and bay leaves. Stir gently.
  5. Add in the carrots and mushrooms to the slow cooker. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  6. Once done, remove bay leaves and stir in fresh parsley before serving.

Notes

  • For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the stew during the last hour of cooking.
  • Serve with crusty bread or over mashed potatoes for an extra comforting meal.
