  • 2 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup red wine
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 pound pasta of choice (for serving)

Instructions

  1. Season the beef with salt and pepper, then heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned.
  2. Transfer the beef to the slow cooker. Add chopped onion and minced garlic.
  3. Pour in the red wine, crushed tomatoes, tomato paste, oregano, basil, and the bay leaf.
  4. Cover and cook on low for 8 hours or until the beef is tender.
  5. Shred the beef with two forks and stir back into the sauce before serving over cooked pasta.
