This Sun-Dried Tomato Pasta Will Make You Ghost Your Regular Mac & Cheese

Ingredients

  • 8 ounces sun-dried tomatoes
  • 1 pound pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions.
  2. In a pan, heat olive oil over medium heat, add garlic and red pepper flakes, and sauté until fragrant.
  3. Add sun-dried tomatoes and cook for another 2 minutes.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in the Parmesan cheese until melted and smooth.
  6. Combine the pasta with the sauce, adding salt and pepper to taste.
  7. Serve garnished with fresh basil.

Notes

  • Adjust the level of red pepper flakes to your preferred spice level.
  • This dish can be made ahead and reheated.
