Tasty Beef Stew and Dumplings

  • 4 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted

Instructions

  1. In a large pot, heat the oil over medium heat. Add the beef and brown on all sides.
  2. Add the onions and garlic, cooking until softened.
  3. Stir in the tomato paste, thyme, salt, and pepper.
  4. Pour in the beef broth and bring to a boil, then reduce heat and simmer for 1.5 hours.
  5. Add carrots and potatoes, cooking until tender.
  6. In a bowl, mix flour, baking powder, salt, milk, and melted butter to form dough.
  7. Drop spoonfuls of dumpling dough onto the stew and cover. Cook for an additional 20 minutes.
  8. Serve hot and enjoy!
