  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups corn chips
  • 2 cups shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup kidney beans
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/2 cup black olives, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain the excess fat.
  3. Add the taco seasoning to the beef and follow package instructions.
  4. In a casserole dish, layer half of the corn chips, followed by the beef mixture, topped with kidney beans and diced tomatoes.
  5. Add a layer of cheddar cheese and repeat the layers, finishing with cheese on top.
  6. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  7. Remove from the oven and let it cool for a few minutes. Serve with sour cream, green onions, and olives.

Notes

  • You can substitute ground turkey for a leaner option.
  • Add jalapeños for added heat if desired.
