  • 2 pounds beef chuck, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce

Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add the beef and brown on all sides.
  3. Stir in onions and garlic, cooking until onions are translucent.
  4. Add carrots, potatoes, beef broth, thyme, salt, pepper, tomato paste, and Worcestershire sauce.
  5. Bring to a boil, then reduce heat to low and simmer for 2-3 hours.
  6. Adjust seasoning to taste before serving.

Notes

  • For extra flavor, use beef broth instead of water.
